Keto cheesecake fluff is a very simple recipe that takes a few minutes to prepare and is perfect for a quick after dinner keto dessert for very little carbs. Typical keto cheesecake fluff is made with just 3 ingredients; your low carb sweetener of your choice, heavy whipping cream and cream cheese.
The 3 traditional ingredients take on more of a vanilla cheesecake flavor, but they are easily customizable to change the flavors to your preference.
Today our recipe goes up a notch for those who love cheesecake, but also chocolate! Keto Chocolate Cheesecake Fluff has a light texture, with a chewy, smooth, and creamy mouth feel.

Place cream cheese, vanilla extract, powdered sweetener, cocoa powder and optional (but recommended) salt in a mixing bowl. (Adding a small pinch of pink Himalayan salt or flaked sea salt is always a plus with chocolate because it enhances the flavor of chocolate. If you like super chocolatey things, you can add a touch of cocoa. )
Whisk using an electric whisk until smooth.
In a clean mixing bowl, whip heavy cream with clean electric whisk until just below stiff peaks. It should be fluid, but thick.
To fold whipped cream into chocolate mixture with spatula until blended. Taste and adjust the sweetener and cocoa to taste.
Spoon or pipe in small serving jars or bowls. Possibility of serving with a little grated dark chocolate for a nice presentation.
One of our favorite new low-carb sweeteners that doesn’t leave an aftertaste is Better than Sugar by Sweetleaf. They have a confectionery powdered sweetener and they also have a granulated option. It’s a combination of erythritol and stevia and has a lot of sweetness like sugar would provide.
Swerve Confectioner Sweetener is also low in carbs, but doesn’t have as much sweetness and you may need to use a little more to get it as sweet as you want. Allulose would be another option, but again, it’s not as sweet as using Better than Sugar sweetener. Allulose comes in liquid and granulated form.

If you don’t have any nut allergy, there are plenty of vegan cream cheeses in many markets today. Be careful because most of them use cashews or almonds as the base. You can also swap out canned coconut cream for a substitute for cream cheese and heavy cream in this keto cheesecake fluff recipe.

Recipe Notes: Use good quality cream cheese and make sure it is high in fat. I love Philadelphia. Cheaper, thinner cream cheeses can alter the consistency of the fluff of the cheesecake.
