5 recipes to spice up Memorial Day for any type of eater


Ready to kick off the summer at the Memorial Day BBQ? Instead of the traditional hotdogs and burgers, spice up your menu this year with one of these tasty dishes. From vegetarians and meat lovers to picky eaters, we have what you need. Here are five of our favorite recipes to kick off the summer season in the most delicious (and spicy!) Way possible.

For meat lovers: slow cooked spicy pulled pork

Although hotdogs and burgers are a classic barbecue find, you can’t go wrong with the delicious pulled pork. Served on its own or as a slider, your guests will beg you for the recipe.

ingredients

  • 3 lbs. lean pork tenderloin
  • 1 onion, quartered
  • 4 cloves of garlic, sliced
  • 4 jalapenos, whole
  • 1 tablespoon of paprika
  • 1 tablespoon of garlic powder
  • 1 tablespoon of chili powder
  • 2 teaspoons of salt
  • 2 teaspoons of cumin
  • 1 teaspoon of pepper
  • 1 cup of barbecue sauce
  • 1/2 cup low sodium chicken broth

Instructions

  1. Combine all the spices in a bowl and mix them together. Rub the spice mixture into the pork tenderloin.
  2. Add the onions, garlic and whole jalapenoos to the slow cooker evenly along the bottom. Put the spice-rubbed pork on top of these ingredients.
  3. In a separate bowl, combine the barbecue sauce and chicken broth and pour over the pork in the slow cooker.
  4. Cook the pork over low heat for 8 hours. Once cooked, chop the pork in the slow cooker with two forks and allow the pork to continue marinating in the sauce mixture for at least 30 minutes over low heat to allow the barbecue sauce to thicken.

For vegetarians: Thai-style spicy grilled vegetable skewers

Zucchini, squash, peppers and mushrooms on metal skewers.

Who said vegetables have to be boring ?! These veggies are grilled to perfection with a nice char flavor and caramelized finish that will leave your guests wanting more.

ingredients

  • 1 1/2 cups packaged cilantro leaves
  • 8 cloves of garlic, peeled
  • 2 tablespoons fish sauce (under soy for vegan barbecue skewers)
  • 1 tablespoon of water
  • 1 teaspoon of freshly ground black pepper
  • 1 tablespoon of garlic pepper sauce
  • 1/3 cup of vegetable oil
  • 2 pounds of veggies, cut into bite-sized pieces (any combination of mushrooms, peppers, scallions, zucchini, and yellow summer squash)

Instructions

  1. Cut the desired vegetables into bite-sized pieces and set them aside.
  2. Add the cilantro, garlic, fish sauce, water, pepper, and chili and garlic sauce to a food processor and blend until a paste is formed. While continuing to run the food processor, slowly add the oil through the spout on the lid. Pour the marinade over the vegetables, flipping them for ample coverage. Cover and refrigerate to marinate for at least an hour.
  3. Next, take the marinated vegetables and thread them onto the skewers and add the vegetables to a medium heat grill. Let the skewers cook for 12-15 minutes depending on the desired cooking, turning them often to prevent them from burning.

For the most demanding palates: southern spicy grilled chicken

Southern-style grilled chicken paired with potatoes and coleslaw.

Are you not always able to satisfy everyone’s tastes? until they try your moist chicken spread in a spicy homemade barbecue sauce. This is the perfect dish for the fussy eaters on your guest list!

ingredients

  • Kosher salt
  • Cold water
  • A 3 1/2 pound chicken, cut into 8 pieces
  • 4 tablespoons of unsalted butter
  • 1/2 cup chopped onion
  • 2 large cloves of garlic, minced
  • 1 1/2 teaspoons of sweet paprika
  • 1 1/2 teaspoons pure ancho chili powder
  • 1/2 teaspoon of chopped red pepper
  • 1/2 cup packaged dark brown sugar
  • 1/2 cup of cider vinegar
  • 1/2 cup of tomato paste
  • 2 tablespoons of molasses

Instructions

  1. To pickle chicken, 1/4 cup kosher salt in 2 liters of cold water. Add the chicken to the salt mixture and refrigerate for at least 2 hours.
  2. Melt the butter in a medium saucepan. Once melted, add the onion and garlic to cook over low heat until softened. Mix the paprika, ancho powder, and chopped red pepper into the mixture for 1 minute. Then, mix in a cup of water, brown sugar and vinegar and bring to a boil. Continue to simmer and add the tomato paste and molasses, stirring occasionally until the sauce thickens after about 10 minutes.
  3. Turn on the grill at 500 °. Drain the chicken from the salted water and dry it. Add the chicken to the heated grill until just cooked, turning it occasionally for an even char. It will take about 25 minutes for white meat and 35 minutes for dark meat.
  4. Set aside half of the barbecue sauce. Brush the remaining half over the chicken and continue grilling for about 10 minutes.
  5. Serve the chicken with the remaining barbecue sauce.

ingredients

  • 4 cups of diced watermelon
  • 1 pinch of salt
  • teaspoon of chili powder
  • 1 lime, peeled and squeezed
  • 3 tablespoons of crumbled cotija cheese
  • 1 tablespoon of chopped fresh cilantro

Instructions

  1. Cut the watermelon into cubes, adding them to a large bowl.
  2. Sprinkle the watermelon with a pinch of salt and chili powder, adjusting the amount to your preferred spice levels. Mix well to evenly distribute the spices. Squeeze fresh lime juice on top and add lime zest if desired.
  3. Add the crumbled cotija cheese and cilantro and serve.

ingredients

  • 1 1/3 cups of flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/8 teaspoon of allspice
  • 1/8 teaspoon of Cardamom
  • A pinch of clove powder
  • 1 stick of butter
  • 1/2 cup of sugar
  • 1 egg
  • 1 teaspoon of vanilla

Instructions

  1. Whisk together the flour, baking powder, and spices in a large bowl.
  2. Whip the butter and sugar together until fluffy. Add the egg and vanilla to the wet mixture.
  3. Using a low speed mixer, slowly add the dry flour mixture into the wet mixture until it blends.
  4. Wrap in cling film and refrigerate for at least 1 hour.
  5. With the help of a rolling pin, roll out the dough on a floured surface and cut out the biscuits with the cookie cutter of your choice.

For the royal icing:

ingredients

  • 4 tablespoons of meringue powder
  • Poor 1/2 c. water
  • 1 pound of powdered sugar
  • 1/2 – 1 teaspoon of light corn syrup
  • A few drops of clear extract, such as almond (optional)

Instructions

  1. Combine the meringue powder and water in an electric bowl and use the leaf attachment to beat until smooth and fluffy. Sift the icing sugar and beat over low heat to combine.
  2. Once combined, add the corn syrup and extract. Increase the mixing speed to medium-high / high and continue whisking for 5 minutes until the glaze is shiny and stiff peaks form. Do not overdo it.
  3. Cover the bowl with cling film in contact with the glaze or divide and color with gel paste food coloring.
  4. To fill your cookies, add the water to the icing a teaspoon at a time, stirring with a rubber spatula until you get the consistency of the syrup, and? Flood? the cookies with the icing.
