Grilled Shrimp Skewers With Coconut And Red Curry


The Grilled Coconut Red Curry Shrimp Skewers with Pepper and Onions are so tasty, thanks to one of my favorite staples: red curry paste.

The prawns of these red curry and coconut shrimp skewers marinate in refreshing coconut milk, spicy red curry paste and jalapeños, along with fresh garlic, ginger and lemon juice green. It’s a perfect match for large, juicy prawns, which are charred well with the vegetables on the grill. Most of the preparation and cooking time is hands-off, giving you time to heat up your grill and enjoy the summer weather. Curry paste, a pantry staple that I keep handy, makes it easy and quick to make a tasty dinner without too many dishes – it adds so much dimension to a marinade. Curry paste comes in different heat levels, so if you’re not a fan of spicy dishes, be sure to buy a milder paste. You can also omit the jalapeño or just remove all the seeds and ribs to keep the heat in check. Don’t be afraid to taste as you go!

What to serve with curried shrimp skewers

These grilled curried shrimp skewers would be delicious with coconut brown rice or lentils. You can also keep it very simple and simply serve them with a piece of your favorite bread or a side salad.

Variants:

  • Substitute chicken for the shrimp.
  • Add zucchini or squash for extra veggies.
  • If you don’t have a grill, cook the skewers on a drip pan on your stovetop.
  • Buy a mild curry paste and omit the jalapeños if you don’t like spicy dishes.

The Red Curry Coconut Shrimp Skewers with Pepper and Onions are so tasty, thanks to one of my favorite staples in my pantry – red curry paste.

  • 1 ½ Kg big, 20-25 # shrimp, peeled
  • ½ tea kosher salt
  • 1 Red onion
  • ½ Chopped off low-fat coconut milk
  • 2 tablespoon Red curry paste, or more to taste
  • 1 ½ tea minced or grated fresh ginger
  • 2 cloves Garlic, minced or grated
  • ½ jalapeño, chopped (optional)
  • 2 limes
  • 2 Red bell pepper
  • 8 or 16 large skewers
  • Cooking spray
  • Chopped cilantro for serving
  • Pat the shrimp dry and season both sides with salt.

  • Cut the onion into 8 wedges and reserve 7 wedges for the skewers.

  • Mince the remaining quarter and add to a large bowl along with the coconut milk, curry paste, ginger, garlic and jalapeño (if using) along with the zest and juice of 1 lime.

  • Whisk until smooth, then give it a taste; if you want a stronger curry flavor, add a little more paste.

  • Add the shrimp to the bowl and marinate for 30 minutes.

  • Meanwhile, preheat the grill to high heat and oil the grates.

  • Cut the reserved onion quarters into about 1 inch pieces and try to keep the layers intact.

  • Cut the bell pepper into 1 to 2 inch pieces.

  • Thread the shrimp, onion quarters and [individual or doubled slices of] bell pepper on lined skewers, alternating as desired, but starting and ending each skewer with shrimp, for a total of 8 skewers.

  • Reserve the marinade and lightly spray the skewers with the cooking oil.

  • Add the skewers to the grill and brush with the marinade. Grill, 2 to 3 minutes per side, brushing with marinade after turning, until shrimp are pink and firm and onion is lightly charred.

  • To serve, arrange the skewers on a plate. Generously sprinkle chopped cilantro over everything and serve with lime wedges.

If using wooden skewers, soak them for at least 30 minutes before grilling.
