Homemade Strawberry Ice Cream Recipe – Super Healthy Kids


Strawberries are so sweet and juicy in the summer that they are the perfect fruit for making popsicles. This strawberry ice cream recipe has just 2 ingredients and is sure to be a summer favorite!

How to make strawberry ice cream at home

First of all, we start with beautiful red strawberries. The advantage of this recipe is that you can use strawberries that might be disappearing. If they’re too mushy to eat, use them to make these popsicles!

Mixed. I didn’t add any water or juice, or anything. I love my Blendtec for this reason. He really mixes anything up. If your blender is not as powerful, you can add some water / juice if you want. I know of some strawberry popsicle recipes that require you to just mash the strawberries, but my kids are tired of the “chunks” so I love that these popsicles are smooth.

The strawberries blend into a nice puree that you can add directly to your popsicle molds. Pour some of the mash into the bottom of the mold, then alternate with the yogurt and mash until the mold is full. This will give you the pretty swirling look.

Should I add sugar to my strawberry popsicles?

My popsicle recipe doesn’t call for sugar. I know some people feel like they need to add sugar to lower the freezing point and so the popsicle has a smoother “bite”. This is totally fine, but for me I think it is more important to help train my children’s taste buds to love the natural flavors of foods without the added sugar all the time.

Why are these popsicles healthy?

These strawberry popsicles give your kids a serving of fruit and protein as well as fiber and calcium! Store bought popsicles are basically sugar and water and won’t keep you full for 5 minutes. These ice creams definitely have substance though and are actually a balanced snack.

  • 12 way strawberries
  • 1 Chopped off Plain Greek yogurt
  • In a blender, blend the mashed strawberries.

  • Spread yogurt and strawberry puree in popsicle molds.

  • Freeze until hard. Enjoy!
