Keto Bacon Cheeseburger Casserole (NEW AND IMPROVED!)


This bacon cheeseburger casserole is made low in carbs secretly using cauliflower as a base and no one will know! It’s low-carb, keto, gluten-free, nut-free, and grain-free! My new and improved method makes this a much easier casserole dish to put on the table quickly!

A cheeseburger casserole is essentially a deconstructed cheeseburger! All the flavors of a cheeseburger made into a layered casserole dish with the secret plant ingredient as a base! This recipe was first published in March 2015 and has been updated with a new and improved method and video.

I love a cheeseburger every now and then, but I always skip the bun. I’m gluten and keto free, burger buns aren’t. But aren’t the cheeseburger and toppings why we love them so much? Now don’t get me wrong, I love keto buns and keto bread like everyone else, but sometimes I just don’t have time to whip them up for a burger.

I very much doubt the bread makes the burger. So I give you the upside down burger made into a layered dish!

Bacon cheeseburger casserole 1 (1 of 1)

Impress your family or friends when you prepare this casserole dish. This recipe requires a few steps, but the results are well worth it.

Bring it to a pot luck and WOW everyone out there when you tell them they just ate cauliflower! Cheese and bacon do everything well in my world. Even if you watch your calories, this dish will fill you up with a small portion, so the calories will be worth it !!

The previous method of making this casserole when I first posted it in 2015 required steaming a fresh head of cauliflower. You see that in 2015 there weren’t many options as you see today for cauliflower already in the form of rice. The other change I made to make this easier is to cook the bacon instead of looking at it in a pan. This way you don’t have to keep the bacon and can continue with the rest of the recipe.

Bacon Cheeseburger Casserole 2 (1 of 1)

Ingredients – see exact amounts below

  • Bacon
  • Avocado oil
  • Ground beef
  • Seasonings
  • Frozen cauliflower rice
  • Coconut Flour
  • Heavy cream
  • Mustard
  • Cheddar cheese

Instructions

Preheat your oven to 400 degrees F. Add your bacon in an even layer on a large baking sheet and bake for 20 minutes or until crisp. You can fry your bacon in a pan, but cooking the bacon saves time to speed up the rest of the recipe.

Add avocado oil in a large skillet and add the ground beef. You can use any oil you prefer. You can also substitute ground beef for ground turkey or chicken if you wish. Cook until browned. Stir in the onion powder, parsley, garlic powder, salt and pepper. Remove with a skimmer into a bowl to keep warm and set aside.

Place the frozen cauliflower rice in a microwave-safe bowl and cook for 5 minutes. Add the coconut flour and salt and mix well. Put aside. SEE NOTES BELOW IF USING FRESH CAULIFLOWER.

Once the bacon is crisp, remove to a paper towel-lined pan. Once cooled, cut into pieces.

Make the sauce: Add the butter to the pan and stir in the coconut flour. Reduce heat to low and stir until the flour has absorbed the butter. Pour in the heavy cream and mustard and continue stirring until it thickens.

Assembly

  1. Place ½ cup of the sauce in the bottom of a 9 x 13 baking dish.
  2. Spread the cauliflower mixture over the sauce as evenly as possible.
  3. Place 4 ounces of cheddar cheese over the cauliflower rice.
  4. Distribute the ground beef evenly over the cheddar.
  5. Pour half of the remaining sauce over the beef.
  6. Place the rest of the cheddar on the sauce.
  7. Pour the remaining sauce on top and sprinkle with chopped bacon.
  8. Cover and cook for 30 minutes. Uncover and cook for another 5 minutes.
  9. Let cool out of the oven for 15 to 20 minutes before slicing and serving.
  10. Garnish with chopped fresh green onions, if desired.
  11. Store leftovers in an airtight container in the refrigerator for up to 3 days.

Bacon cheeseburger casserole 3 (1 of 1)

You can certainly use fresh cauliflower for this recipe but you will need to cook it before using it in the casserole dish which takes a bit longer. In 2015 I steamed 6 cups of cauliflower florets then used the food processor to turn it into rice, much more time and having to clean two kitchen appliances.

You can also use fresh cauliflower rice. I didn’t do that too BUT you still have to cook the cauliflower rice or it won’t get nice and chewy in the base of this pan.

Buying frozen cauliflower rice is the fastest method as it is already cooked and you only need to reheat it for about 5 minutes. See my new video below.

I think this keto cheeseburger casserole doesn’t need sides but if you wanted these Keto Air Fryer Rolls would be easy to add or a simple salad like my avocado salad with cucumber and tomato or my dill and cucumber salad.
