I would like to clear up this constant question that arises almost daily about whether the coconut is a nut. While the United States Food & Drug Administration (FDA) claims that the coconut is a nut and that it comes from a tree, it is actually a FRUIT. People with a nut allergy can also be allergic to coconut, but being allergic to coconut is not the same as having a nut allergy.
My own son was diagnosed with a peanut and tree nut allergy when he was 2 years old. He has been eating coconut safely all these years without a problem and is now 14 years old. Coconut is a fruit, called a drupe. It’s like a peach with a pit.
The American College of Allergy, Asthma and Immunology puts it well: “The coconut is not a botanical nut: it is classified as a fruit, even though the FDA recognizes the coconut as a nut. Although allergic reactions to coconut have been documented, most people with allergies to nuts can safely eat coconut. If you are allergic to nuts, talk to your allergist before adding coconut to your diet.
You can definitely omit the corn extract if you really don’t want to buy it. The texture and flavor of this keto cornbread will always be delicious because the cheddar and jalapeno really mask any coconut flavor. The corn extract really gives the authentic cornbread flavor so in my opinion it’s worth the money spent.
One of our favorite new low-carb sweeteners that doesn’t leave an aftertaste is Better than Sugar by Sweetleaf. They have a confectionery powdered sweetener and they also have a granulated option. It’s a combination of erythritol and stevia and has a lot of sweetness like sugar would provide.
The Swerve Confectioner Sweetener is also low in carbs, but doesn’t have as much sweetness and you may need to use a little more to get it as sweet as you want. Allulose would be another option, but again, it’s not as sweet as using Better than Sugar sweetener. Allulose comes in liquid and granulated form.

Unfortunately, coconut flour cannot easily be replaced with other keto flours simply because it is so absorbent and requires more fluids and eggs, while reducing the amount of coconut flour. necessary. If you want a cornbread recipe that doesn’t use coconut flour, you’ll have to look elsewhere online for an almond flour recipe to keep it keto.
If you’ve been looked down upon by coconut flour recipes in the past, I must point out that this cornbread doesn’t taste like coconut at all. Keto Nut Free Jalapeño Cornbread
Preheat the oven to 350 degrees F.
Grease an 8 inch cast iron skillet.
In a stand mixer or bowl, whisk or combine the eggs, heavy cream, sour cream and butter.
In another bowl, whisk together flour, salt, baking soda, Better than Sugar sweetener and corn extract.
Pour this into the stand mixer and mix until combined or stir to combine.
Add 1/2 cup of the cheese and 1/2 of the sliced jalapeño, stir to combine.
Spread in the pan. Top with remaining 1/4 cup cheese and jalapeño slices. Bake for 35 to 40 minutes or until a toothpick in center comes out clean.
Let cool for about 10 minutes before serving.
Net carbs: 2g
If you can get your hands on a sweet corn extract, it will taste even more like cornbread.
