Keto Nut Free Jalapeño Cornbread

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Grease an 8 inch cast iron skillet.

  3. In a stand mixer or bowl, whisk or combine the eggs, heavy cream, sour cream and butter.

  4. In another bowl, whisk together flour, salt, baking soda, Better than Sugar sweetener and corn extract.

  5. Pour this into the stand mixer and mix until combined or stir to combine.

  6. Add 1/2 cup of the cheese and 1/2 of the sliced ​​jalapeño, stir to combine.

  7. Spread in the pan. Top with remaining 1/4 cup cheese and jalapeño slices. Bake for 35 to 40 minutes or until a toothpick in center comes out clean.

  8. Let cool for about 10 minutes before serving.
