You can choose from three meal plan options:

You can swap the dairy mozzarella cheese as well as the ricotta to make this easy, dairy-free keto skillet lasagna. I found dairy-free shredded cheese to replace mozzarella, made with almond milk as well as cashew milk, at Trader Joes and Whole Foods. I haven’t found any dairy free ricotta cheese, but if you could find dairy free cottage cheese it would be a great alternative to ricotta.

Quick Keto Pan Lasagna

A breezy and easy dish, full of all the familiar flavors and textures of a traditional lasagna … in a fraction of the time and with a fraction of the carbs. Enjoy!

Ingredients

  • 1
    tablespoon
    olive oil
  • 1
    small
    onion
    chopped
  • 1
    Clove
    Garlic
    peeled and chopped
  • 1.5
    kg
    Ground beef
  • 1/2
    tea
    italian seasoning
  • 1/4
    tea
    fresh basilic
    (with a little more for garnish)
  • 14
    ounces
    marinara sauce
    unsweetened passata or tomato
  • 4
    cups
    green cabbage
    cut into 1 “squares
  • 1/2
    Chopped off
    mozzarella cheese
  • 1/2
    Chopped off
    ricotta cheese
  • sprinkle with grated Parmesan and basil leaves
    optional

Instructions

  1. Heat a large pan over high heat and add your olive oil.

  2. Cook the onions and garlic for a minute or two until translucent and fragrant.

  3. Season the ground beef and cook until golden brown and cooked through.

  4. Add the seasonings (Italian seasonings and basil) to the beef and mix.

  5. Place the sauce in the saucepan and stir through the beef until the sauce is well combined.

  6. Add the cabbage squares to the pan and stir gently until incorporated.

  7. (It may seem like there is too much cabbage, but be patient, as it will shrink in volume as it cooks.)

  8. Cook over low heat for another 15 minutes, until the cabbage is just tender.

  9. Stir the mozzarella into the sauce, then pour the ricotta on top.

  10. Finish with a pinch of Parmesan and a little fresh basil leaves. Stir to combine all the cheese and enjoy!

  11. Storage: Lasagna can be stored in a covered container in the refrigerator for up to a week. It can also be portioned and frozen.
