When cooking ribs in the oven, slow, slow cooking is always the way to go if you want really succulent, falling ribs!

  1. Start with pheat your oven to 250 degrees F. Lay parchment paper on two large baking sheets. (You can skip the parchment and use foil if you prefer, but sometimes the foil can get stuck on the meat, so I avoid it.)
  2. Combine Swerve Sub with brown sugar or other low carb sweetener of your choice, pepper and salt in a small bowl. Place the ribs on baking sheets. Sprinkle the ribs to rub on both sides.
  3. Place another sheet of baking paper on the ribs. Cover the molds tightly with aluminum foil to create a tight seal. Bake for 2 hours.
  4. Increase the temperature to 325 degrees F. Remove the ribs from the oven, then remove the foil and parchment paper. Remove cooking liquid / fat from each baking sheet and pour into a small saucepan. Set aside for now. Return ribs to oven and cook, uncovered, for an hour or until tender.
  5. Add the unsweetened BBQ sauce to the pot with the cooking liquid and cook over medium heat to bring to a boil. Stir until well combined and heated through, about 5 minutes. Put aside.
  6. When ribs are out of oven, brush both sides with barbecue sauce, broil or broil until dark brown and shiny, about 5 to 8 minutes. Enjoy!
