grilled salmon with corn and black beans

You’ll love the spicy smoky flavors of the salmon paired with the sweet corn side with flavors of fresh lime and cilantro. Fresh corn is the best here, but if you’ve frozen it works just as well! It’s a complete meal ready in less than 30 minutes.

Salmon is an excellent source of high quality protein, containing all essential amino acids and a good source of vitamin E, a powerful antioxidant. When I buy salmon I look for sustainable wild options, fresh or frozen, such as Alaskan salmon which is raised in crystal clear waters – it costs a bit more but it’s leaner than farmed because the fish are raised in the wild and get more exercise, the meat has a natural red color while the farmed salmon is artificially colored. Coho, chum and pink salmon are less fat than the King and Sockeye varieties.

Variants:

  • If you prefer to make this low in carbs, replace the corn and beans with diced avocado and cucumber or tomatoes.
  • Don’t like salmon? You can replace it with swordfish or grilled chicken.
